Early January we picked all the apples off our two apple trees - it's been 3 weeks since we picked them and they were starting to show signs of age so I decided to make apple sauce. To follow is the recipe I used. It tasted soooooo creamy (must have been the butter - something I never would have thought to put in the apple sauce - but sooooo glad I did) - I think its the best apple sauce I've ever tasted.....
Ingredients:

500 grams Apples, peeled, cored, diced
2 tablespoons caster sugar
1 tablespoon fresh lemon juice
Pinch Mixed Spice
20g Butter
Method:
Combine apple and 1/3 cup cold water in a saucepan over medium heat. Simmer, covered, for 10 minutes or until apples are soft. Add sugar, lemon juice, mixed spice and butter. Stir to combine. Remove from heat. Set aside for 5 minutes to cool.
Remove apple mixture to a food processor. Process until smooth. Serve warm or cold.
I now have a freezer full of apple sauce - yummy!
